Softest Sugar Cookie

~*~SOFTEST SUGAR COOKIE RECIPE~*~ from Facebook ;)
This Recipe is a State Fair Blue Ribbon winner. This is an easy sugar cookie recipe, you don't have to roll it out, and the cookies are soft and chewy, unlike other sugar cookies.

Original recipe makes 4 1/2 dozen

Ingredients

2/3 cup shortening
2/3 cup butter
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/3 cup granulated sugar for decoration

Directions

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

Make it a great one!!

Oatmeal Bread

Ingredients:

3 cups all-purpose flour (plus extra for kneading)

1 cup whole wheat flour

1 cup oats

2 1/4 tsp yeast

1 tsp salt

2 tbsp  butter (I prefer unsalted), softened

1/4 cup honey

1 1/2 cups water (warmed to 90 degrees)

Directions:

1) Mix together 1 cup of the flour, the whole wheat flour, oats, yeast, and salt.

2) Stir in butter and honey – mix well

3) Add the water and stir until fully incorporated

4) Add remaining all purpose flour (1/2 cup at a time) until you have  shaggy, cohesive dough that pulls away from the sides of the bowl. You do not need to use all of the flour – just enough to get to the right consistency.

5) Knead your dough until it is a smooth ball and springs back when gently pressed with a finger.

6) Place dough in large bowl (greased) and cover. Let rise for about an hour and a half (90 minutes).

7) When dough has risen, punch it down and form into loaf shape and place in your bread pan.

8) Cover and allow to rise for another 30 minutes

9) Back at 350 degrees for about 35-40 minutes.

10) Resist the urge to cut bread when it first comes out of oven. Let it cool COMPLETELY – then ENJOY!

Make it a great one!!
